Ingredients
- 1 pound chicken gizzards
- 2 cups buttermilk
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon cayenne pepper (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- Vegetable oil for frying
Step 1: Clean and Tenderize the Gizzards
Rinse the chicken gizzards thoroughly under cold water and trim away any excess fat or tough connective tissue.
Place the cleaned gizzards in a pot of water and simmer gently for about 60 to 90 minutes until they become tender. This step is essential because gizzards can be naturally tough if fried without pre-cooking.
Drain and allow them to cool slightly.
Step 2: Marinate for Flavor
Place the cooked gizzards in a bowl and cover them with buttermilk.
Let them marinate for at least 2 hours, or overnight for the best flavor and tenderness.
Step 3: Prepare the Coating
In a large bowl, combine:
- Flour
- Garlic powder
- Onion powder
- Paprika
- Cayenne pepper
- Salt
- Black pepper
Mix well to evenly distribute the seasonings.
Step 4: Coat the Gizzards
Remove the gizzards from the buttermilk and allow excess liquid to drip off.
Toss them in the seasoned flour mixture until fully coated.
For extra crunch, dip them back into the buttermilk and coat them with flour a second time.
