Creamy Cucumber Salad
Ingredients:
- Kirby pickling cucumbers — 3-4
- Red onion (optional) — ½ small, thinly sliced
- Sour cream — ½ cup
- Mayonnaise — ⅓ cup
- Fresh dill, chopped — ¼ cup
- Fresh lemon juice — ½ tablespoon
- Salt and black pepper — To taste
Instructions:
Step 1: Prep the Cucumbers
Wash and pat the cucumbers dry. Peel them if desired (though it’s not necessary for Kirby cucumbers). Slice thinly using a knife, mandoline, or spiralizer for different textures.
Step 2: Add Red Onion (Optional)
If using red onion, thinly slice it and add it to a bowl with the cucumbers.
Step 3: Make the Creamy Dressing
In a separate bowl, whisk together the sour cream, mayonnaise, chopped dill, lemon juice, salt, and pepper. Taste and adjust seasonings as needed.
Step 4: Combine and Chill
